        The fruits of the coffee are refined through a washing process (fermented inside a water tank) or non-washing process and the seeds are removed and dried. The dried seeds are the “Coffee Beans”. These are the beans before being subjected to heat.

         Alamid Coffee (second photo from the top), which is said to be the “Coffee Illusion”, is being processed inside the body of a palm civet until it becomes dry. The palm civet likes the taste and eats the fruits of the coffee but since it cannot digest the coffee beans which are the seeds, it discharges them outside its body. In other words, the seeds are discharged as stools by the palm civet.

        Since the coffee beans (third photo from the top) discharged by the palm civet, who lives in a natural place, are picked and collected manually, you can just easily imagine the scarcity of the collected coffee beans. The coffee beans are then washed thoroughly and quarantined. In addition, since they are being exposed to high temperature, sanitation would not be a problem.

        The process of making 100% pure Arabica Coffee (left photo) produced in the Philippines is different from the Alamid Coffee. Arabica Coffee is just a normal coffee.

        The coffee beans produced by the DH Coffee Garden are carefully harvested one by one and manually on an altitude of 1000m above sea levelwithin the Philippines. Only the carefully selected beans are roasted on the most preferred roaster after the order is placed. The owner once said “The freshness of the coffee is my life”.

        Korean carrots, antlers (lower right photo), etc. are put inside the chicken used in the chicken soup (upper right photo), and all have outstanding nutritional effect. The soup is perfect to get over the hot weather. Since the amount of salt content is considerably low, it is healthy for the body and it is amazingly delicious. The chicken also contains glutinous rice inside it. It is sliced or cut then eaten with Ojiya flavor. It’s easy to eat and you would feel the energy boosting up inside your body.
